Yuè at Aloft Singapore Novena: Elevate Your Culinary Experience with Modern Chinese Cuisine for Friends and Family

One of the key pillars of Aloft Hotels around the world is the passion for music. The recently inaugurated Aloft Singapore Novena introduces Yuè, a modern Chinese dining establishment that takes the place of the former New Ubin Seafood. Yuè “乐” translates in Mandarin to music.

The menu invites guests to enjoy a symphony of flavours featureing dishes renamed after song titles from the restaurant’s daily playlist, hoping to evoke fond memories of the yesteryears. Executive Sous Chef Awyeong Kin is the mastermind behind Yuè at Aloft. His career was established in Hong kong, where he apprenticed under several reputable Hong Kong Chefs before venturing into the realm of renowned Cantonese restaurants.

There are over 130 dishes on the menu including different preparation methods for its seafood at this elevated zi char restaurant. Guests can anticipate a lively atmosphere conducive to shared and convivial dining experiences.

The Braised Fish Maw broth with Crabmeat and Conpoy is an excellent starter for the unending wet weather this year end. Each order comes with a generous serving of ingredients. As part of the restaurant’s opening special till end December 2023, they will add 45ml of Martell Cordon Bleu for added flavour to any small order that serves four (S$45).

The Pumpkin Broth with Crabmeat and Scallop is another hearty thick soup. Clear soups such as the Slow-boiled soup of the day or Classic fish soup with bitter gourd and egg white are also available.

The Sze Chuan Mala-infused Lotus Root (S$6) is sure to tantalise your taste buds. Indulge in the delightful combination of flavours with the Crispy Baby Squid accompanied by Sweet Shrimp Paste and Ground Peanut (S$15) – a fusion of the best elements – Crispy Baby Squid and Rojak!

Our culinary exploration extended to the Poached Sliced Beef with Sze Chuan Peppercorn (S$32), featuring a mildly spicy kick and a bed of vegetables on the lower layer.

A unique dish that surprised us was the Deep-fried lobster with creamy milk and salted egg lime sauce served with nachos. The tangy and savoury meaty lobster is addictive. A prawn version is also available.

Set menus are available from S$26 per person up to S$418 for 8 people.
