I recently returned from a hosted stay at the Sri Panwa Villas and Resort in Phuket, Thailand. One of the activities during the stay was a cooking class that is offered to guests at a fee. We learned to cook two dishes of which I am sharing the recipe for making a refreshing Papaya Salad with Shrimp, commonly known as Som Tam Goong in Thai.

 

Ingredients Required for Som Tam Goong

Som Tam Goong - Shred Carrot and Green Papaya to fine strips
Shred Carrot and Green Papaya to fine strips
  • 100 g Green Papaya
  • 50g Shredded Carrot
  • 3g Chopped Garlic
  • 3 pieces sliced chilli padi (bird chilli)
  • 5 pieces cherry tomatoes, quartered
  • 10 pieces cashew nut
  • 6 to 7 fresh prawns

 

The Dressing for Som Tam Goong

  • 1 tbsp sugar syrup
  • 1 tbsp fish sauce
  • 1 tbsp lime juice

Cook Prawns

 

Pan Fry prawn till cooked

  • Deshell Prawns and leave the tail intact
  • Cut the centre of the prawn and put tail through the whole prawn for decorative purposes
  • Pan fry the prawns till cooked

Instead of prawns, you can also use grilled scallops or grilled fish fillets.

 

Preparation Method

  • In a mortar, add chilli & garlic, pestle
  • Add yam dressing ingredients
  • Add cherry tomato, papaya & carrot, pestle and toss until the ingredients absorb the dressing
  • Add fish sauce, lime juice, sugar and fresh chilli to suit your own taste

  • Scoop out the ingredients and plate it
  • Add prawns
  • Add cashew nuts
