Oscar’s at the Conrad Centennial Singapore has given its Sunday Brunch a revamp calling it the Supercharged Sunday Brunch with a bigger and better selection. Highlights of the brunch include a seafood bar, carving station, live stations, Charcuterie and Cheese, Salad Bar and Healthy Blitz, and Decadent Desserts. The brunch is available every Sunday from 12.30 pm to 3.30 pm and is priced at S$98++ with free flow of coffee and tea, S$128++ with free flow of sparkling, house wines, draft beers and craft Gin & Tonic Bar or S$168++ with free flow of champagne, premium wines, bottled Hitachino Nest craft beers and craft Gin & Tonic Bar. Children aged six to 12 years are charged S$49++.
We are impressed by the many live stations here. The Charcuterie station, Noodle Bar, that Eggs with Attitude station, charcoal BBQ grill and organic pasta. Worth the wait while watching the chefs working on their craft in their full element, in my opinion. The Noodle Bar offers Laksa, slow-cooked Beef Cheek noodles, Slipper Lobster Noodle with pork ribs, Fish Noodle Soup, Fish Ball and Minced Pork Noodle or Crispy Fried Seafood Noodle cooked to order. The Organic Pasta station offers three types of Durum pasta with a choice of rocket-basil pesto, Sicilian pesto, pork Amatriciana or Maremmana sauce.
Chefs grill up the fresh lobsters and prime cuts of beef with homemade sauces of blue cheese and cognac, thyme veal jus, habenero tomatillo and an Asian coconut dip at the Charcoal BBQ Grill.
The Charcuterie Station offers freshly sliced Boned San Daniele ham, Pepperoni, Italian pancetta, Hungarian salami, pastrami beef and Aquilan pizza on the tray.
At the Cheese Counter, you can enjoy Cashel Blue from Ireland, French whole Brie, Pecorino Romano and Gorgonzola from Italy, Spain’s San Simon and Manchego Curado or Sparkenhoe Red Lester from the United Kingdom.
The eggs station offers poached organic eggs on English muffins. You have a choice of four toppings such as the lemon-myrtle salmon, Foie gras parcels, pancetta, pulled braised brisket or mullet Bottarga. Top it up with a choice of homemade sauces. There is the tarragon mustard, homemade passion Béarnaise, Hollandaise, house truffle-mushroom Manuka honey, homemade guacamole, fresh baby spinach, micro herbs, gently roasted datterino, or cucumber-cilantro-celery-orange salsa.
Clear your palate and enjoy some healthy blitz freshly made shakes featuring superfoods. The four-metre long salad bar features over 30 toppings including watercress, Mesclun, radicchio red, yellow frisee, endive, fennel confit, caper berries, Kalamata olives with smoked paprika. There are also nine super salads such as Lotus root and smoked duck with green apple, walnut crumbs, grapeseed oil, Sarawak white pepper and fresh sage; Quinoa, goji berries, black beans and yellow peppers with sesame-soy dressing, fresh mint; Confit tuna cubes with chive, citrus mayo, orange bits, orange zest and Manuka honey; or Thyme-marinade mussels and squid rings with chia seeds, celery and Espelette chilli. You will be spoiled for choice with a selection of seven dressings including homemade dressings such as sweet plum and citrus, Asian sesame, passion fruit and white balsamic, or pumpkin pesto.
And you will be glad to know that the seafood bar is complete with Boston lobster, freshly shucked oysters from France, Ireland and Canada, snow crab legs, slipper lobsters, cherrystone clams, sea prawns, and Chilean half shell scallops. The sashimi of tuna, salmon, swordfish, snapper, hamachi and ika is absolutely divine. I know because I had seconds.

End the Sunday beautifully with a feast of desserts including Oscar’s signature freshly made waffles with a choice of ice cream and toppings or Mont Blanc and traditional rum Gâteau Basque with vanilla sauce.
