Refined Italian creative cooking establishment, Tosca at The Ritz-Calrton, Hong Kong has been honoured with one Michelin star only eight months after two-star Michelin chef Pino Lavarra took over as director. Chef Pino has crafted yet another creative menu for the month of February featuring black truffles of Norcia. Norcia Black Truffle Delights menu is a five course meal.  Selected dishes will stay on the a la carte menu throughout the year.

Norcia is an ancient town in the southeastern region of Umbria. Well drained and lime-rich Hilly and mountainous areas surround Norcia. Tartufo nero pregiato Umbro di Norcia (Umbrian rare black truffle of Norcia) is grown between November and March. The Black truffle exudes a pleasing and aromatic scent with exquisite flavours and tastes best when used in fine dishes.

The five course meal will comprise

  • Crab Cookies with Roasted Langoutine
  • Veal Trotter and Black Truffle
  • Cauliflower Risotto with Roasted Scallop Coral
  • Black Truffle and Guinea Fowl with Bread and Sicilian Pistachio
  • Roasted Beetroot and Black Truffle
  • Aged Balsamic Vinegar and Mascarpone Cheese Delice with White Chocolate Tuile and Toasted Rum Baba

Priced at HK$2,180 + 10% per person or HK$2,880 + 10% per guest with wine pairing. Availabel during dinner from 6pm to 10.30pm Monday to Sunday from 1 to 28 February 2014 excluding Valentine’s Day on 14 February 2014.
