Michelin-Starred Alma by Juan Amador Teams Up with Man Fu Yuan for Exclusive 4-Hands Dining in Singapore

From 8 to 10 May 2025, Man Fu Yuan at InterContinental Singapore will host a rare four-hands dinner. Executive Chinese Chef Aaron Tan teams up with Michelin-starred Chef Yew Eng Tong of Alma by Juan Amador. The collaboration, “Ties That Bind”, celebrates friendship, heritage, and craft through a seven-course menu.

This is the first time the two acclaimed kitchens are coming together. Expect Cantonese classics with modern European flair. The menu is shaped by trust and shared respect between both chefs. Each course is designed to honour tradition while embracing innovation.

It begins with Echoes of the Roast, a 21-day dry-aged Iberico pork collar. Lightly pan-fried, it’s rich and tender with a caramelised finish. This dish inspired the entire collaboration. Alma brings finesse with small bites like multi-seed man tou with bak kwa mayonnaise and a foie gras pineapple bun infused with seaweed.

Seafood follows. Man Fu Yuan’s Imperial Tides features flower crab and herb oil. Tide of Pearls pairs Canadian oysters with oyster sauce, dried oyster, and ikura. Each dish balances delicacy with bold umami.

Chef Yew showcases Arctic Char, a no-waste dish where even the bones become sauce. The fish is paired with watermelon and passionfruit. A clear soy dressing adds complexity without overwhelming.

Chef Aaron responds with the Golden Silk Lobster. Poached and crowned with egg floss and salted egg sauce, it’s luxurious yet restrained. Then comes A4 Snow-Aged Wagyu, layered with black garlic and cocoa jus. Deep flavours meet perfect technique.

Man Fu Yuan adds Earth’s Legacy, glutinous rice with preserved meats. It’s comforting, nostalgic, and beautifully executed.

Dessert begins with Poached Peach. Soursop sorbet, salted buttermilk sago and red shiso create a refreshing, seasonal finish. A trio of petit fours follows — an egg waffle with chilli chicken floss, an osmanthus praline, and a pandan-matcha financier.

Ties That Bind is more than a special menu. It’s a tribute to two chefs’ journeys, their cultures, and the bonds that food can build. Wine pairings are available from S$98++ per person.
