The seven wines in Chile’s Marques de Casa Concha offer a unique and complex flavour profile to the table. Last month The Perfect Marques Match, a holistic wine and dine pairing programme. This has been available in seven restaurants here in Singapore including Dusk Restaurant, Flutes at National Museum, News & Gossip, Praelum, Salt Grill & Sky Bar, Salt Tapas & Bar and Smoke & Mirrors.

Below are highlights from four of the seven participating restaurants where we tried a dish from the menu at each restaurant.

Dusk Restaurant offers a three-course pairing menu at S$75++ till the end of this year. The soup pairs with the 2016 Marques de Casa Concha Chardonnay followed by a Tiger prawn Capellini that is paired with the 2016 Marques de Casa Concha Pinot Noir. For the mains, you have a choice of Norwegian Salmon Fillet paired with the Carmenere 2015 or the Beef Cheek with Port Wine Demi Glaze with Cabernet Sauvignon 2016. End the meal with a dessert is then served in the form of Vino Rosso Granite; Chilean Carmenere sorbet with fresh wild berries.

Flutes at National Museum Singapore offers a five-course food & wine pairing menu at S$160++ per person or S$85++ without the wine pairing till the end of October 2018. Start with the Port Augusta Bluefin Tuna with beetroot and horseradish paired with the Marques de Casa Concha Sauvignon Blanc 2015. The Blue Ridge Marron with truffle hollandaise, asparagus and Parmesan Fregola is absolutely divine. The Marron is so sweet with flavours with a perfect pairing with a glass of Chardonnay 2016.

For the mains, you have a choice of Fillet of Grass Whiting with 2015 Marques the Casa Concha Pinot Noir or the Grilled Blackmore Wagyu Tri Tip with Marques de Casa Concha Carmenere 2015.

News & Gossip at Robinson Road is a café by day and a bar at night. Marques de Casa Concha Chardonnay 2016 and Carmenere 2015 are each available at S$12.50 per glass and S$75 per bottle. The tapas menu will be individually priced. The Perfect Marques Match will run until the end of October 2018.

Come here for an unusual meal that pairs with Marquese de Casa Concha wines. Enjoy Jurassic Pasta, a plate of crocodile meat pasta paired with Marques de Casa Concha Chardonnay 2016. Or go for the Shisama Mentai & Egg Quesadilla with the Marques de Casa Concha Carmenere 2015.

Salt Grill & Sky Bar at the top level of ION Orchard offers a full six-course pairing menu with three pairing items for The Perfect Marques Match at S$258++ till end October 2018. The vintages from 2016 have been chosen to complement the three dishes put forth by the chef.

Whipped truffle burrata with pangrattato, leek, fig, tomato, olive, basil and aged balsamic is further accentuated by the Marques de Casa Concha Chardonnay, while the Marques de Casa Concha Pinot Noir enhances the Roasted shark bay brown tiger prawns with seaweed beurre noisette, garlic cream and charred lime. Rounding up the trio is another tribute to the age-old pairing of beef and wine, where theWestholme Wagyu with Manjimup truffle, smoked celeriac, garlic flower and jus meets the Marques de Casa Concha Cabernet Sauvignon.
