Kubo pops up at Tipsy Hippo in Robertson Quay

Fans of Kubo and Chef Kurt Sombero’s woodfired and grilled cuisine can visit the gastrobar Tipsy Hippo at UE Square, near his former location in Robertson Quay. During his limited-time residency at Tipsy Hippo, Chef Kurt will utilise more organic, natural ingredients and embrace an ‘all-meat-parts’ philosophy, showcasing dishes with pork belly, tripe, and rind.

These new dishes at Tipsy Hippo, along with a variety of signature cocktails and alcoholic beverages, create a Tiki-themed experience. In addition to Chef Kurt’s ala carte dishes, Tipsy Hippo is availing their new weekday lunch sets from 12pm to 3pm, priced between S$12 and S$15. Choose from Grilled Chicken Leg with Rice, Soy-glazed Belly with Rice, Roasted Cauliflower Curry Noodles, Striploin Beef with Rice, Fried Chicken Burger and KL Hokkien Mee.

The Five-spiced brisket sliders (S$20 for 3 pieces) consist of slow-cooked five-spiced pulled brisket nestled in brioche buns, accompanied by caramelised onions, pickles, and cheddar cheese. The Kubo’s fried chicken ‘KFC’ (S$18) is prepared with a homemade batter and comes with pickles, salad, and a honey-mayo dip. I thought both dishes were too salty for me.

Chef Kurt’s Curry Chicken and Potatoes (S$18) is my favourite dish. The slow-cooked curry chicken and potatoes are served in a baked, homemade flatbread shell. Each bite offers a delightful explosion of flavours from aromatic spices and tender chicken.

The Pork Crackling with Chipotle Aioli Dip (S$8) is a must for fans of Chicharrón. Enjoy the sinfully crunchy snack with a glass of beer when sharing the table with a bunch of buddies. Other fun and visually invigorating dishes include the Hot Prawn Cocktail (S$18) and Kubo’s Smoked Coconut in Squid Ink Puff.

Three desserts are on the menu. The Roasted Banana Cannoli (S$14) features coconut butterscotch piped cannoli served with roasted banana and whipped vanilla cream. Seems like the menu has changed since we went for the media tasting in May. The Flambee Coconut and Pineapple will be available in July.
