28 March 2012, Singapore – In support of Earth Hour 2012, One-Ninety restaurant at the Four Seasons Hotel Singapore will feature the “raw” concept of cooking, where dishes will be cooked below 40% in order to preserve their nutrients, in their special “Earth Hour” menu.
The 4-course promotional menu is available on 31st March 2012 from 7pm onwards, and cost S$78++ per person.
1st course – Grape Gazapacho with Marcona Almonds, Green Grapes and Edible Flowers
2nd course – White and Green French Asparagus with Poached Organic Egg
3rd course – Choice of any of the following – Slow-cooked Trout with Root, Stalk and Greens of Celery OR Apple-Wood Grilled Sea Bream – Garden Herb Salad, Fennel Puree, Potato Coins OR Handmade Mushroom Ravioli – Fresh Black Truffle, Ricotta, Baby Squash
4th course – Vanilla Panna Cotta with Marinated Tropical Fruits
This is the 5th year the hotel is supporting this annual event. And employees do their part too. In 2008, they developed an organic backyard “Eco-Garden” which today supplies ingredients like herbs, spices, chili, Lime, Okra, Bat Choy, Kailan and Bananas, to some of their restaurants.
One-Ninety restaurant is helmed by renowned chef Giovanni Speciale and senior sous chef Nicholas Owen, and offers local and international favourites using the world’s freshest products.
