No one would have expected to find First Culinary Restaurant, a hidden gem, within ITE College Central in Ang Mo Kio. In fact, this Cantonese restaurant opened when ITE College Central opened four years ago. Located on the ground floor next to other services and retail outlets such as POSB Bank or Fairprice and other F&B outlets, First Culinary is privately owned and operated. 11 years ago, it first opened in Kaki Bukit Ave 3. We understand that outlet will be closing soon.
I first visited First Culinary with some other media friends in August this year where the chef served up their signature dishes which I enjoyed so much, that I brought my family there for dinner a month later.Â
First Culinary – Soup
There are a variety of soups available here. Pamper yourself with a serving of Mini Buddha Jump Over the Wall, priced at S$28 for one. This soup is rich in flavour from the pot of ingredients it is served in. First Culinary spares no detail in making the food here look good and presentable. Other soups available include abalone chicken soup, fish maw and abalone chicken soup, sea cucumber and abalone chicken soup, dried scallop and fish maw chicken soup or cordyceps, mushrooms and black Matsutake stew with fishbone soup. Soups start from S$18 per person up to S$60 for a large bowl to share.
First Culinary – The Meats
There is quite an extensive selection of meat dishes here. From its well-caramelised char siew to the Foie Gras Sauce Kung Fu Duck, there really isn’t anything bad to pick at this restaurant.
The Crispy Skin Roast Pork is available at S$14 per serving. The chef here has gotten it right especially when the Crispy Skin Roast Pork is done to perfection. This is good. It is comparable to some of the other bigger restaurants in Singapore.
The Kung Fu Roasted duck is prepared differently The roasted duck sits on a Foie Gras adding yet another flavour. This dish is priced at S$15 for a quarter duck, S$27 for half a duck and S$50 for a whole duck.
If you love beef and garlic, then you have to order the Signature Garlic Beef Cube. This dish is priced at $18 for a small portion, S$27 for medium and S$36 for a large portion. I absolutely love this dish and it goes well with some steamed rice.
First Culinary – The Seafood
First Culinary is a seafood restaurant. It has in its menu some 10 different types of crab dishes. The one I tried is the Imperial Crab and you could taste the flavours from wok hei, a high fire over the wok. The claypot helped keep the salty yet spicy crabs hot and their rich complimenting flavours from the ginger, garlic, onions, scallions.
We also tried the Sautéed Prawns with Salted Egg Yolk. Priced at S$18 for a small portion, S$27 for medium and S$36 for a large serving, these prawns are rather delightful.
I love fish steamed in Hong Kong style. So this Hong Kong Style Soon Hock was definitely comforting food. The next time I visit, I’ll have to try the Braised Fish Head.
First Culinary – Vegetables
Something I don’t find very often in Chinese restaurants are wingle beans. And First Culinary has cooked it well with anchovies and sambal. The sambal wingle beans are priced at S$8 for a small serving, S$12 for medium and S$16 for a large serving.
Other vegetable dishes are also available such as Chinese spinach, kang kong , small white cabbage, Hong Kong kai lan or cai xin.
First Culinary – Rice or Noodle Dish
You can even have rice, porridge or noodles if you are dining alone. The vermicelli with sliced red grouper and bitter gourd is extremely fragrant. It is one of my favourite dishes. Rice, porridge or noodles are available from S$8 for a small serving and up.
First Culinary is open daily from 10.30am to 3pm for lunch and 5.30pm to 10pm for dinner.
