Local Delicacies and Old-School Treats at Spice Brasserie

PARKROYAL on Kitchener Road’s National Day Buffet celebration features well-love local delicacies, old-school cookies and candy, rainbow bread ice-cream sandwiches and a traditional kachang puteh man doling out a variety of Indian snacks in conical flutes.

On 9 August, diners enjoy a “Pay 5 Dine 7” promotion at Spice Brasserie. Enjoy highlights such as Barramundi with Chef’s Secret Sambal, Creamy Salted Egg Yolk Slipper Lobster and other seafood at dinner. A spread of local and Asian delights such as Fried Oyster Omelette, BBQ Char Siew and Roast Pork, and Fresh Prawns and Lala in Shaoxing Wine, alongside a variety of Indian curries and Naan from the Tandoor, are available for both lunch and dinner.

Feast on a galore of freshly cooked Chilli Crab with Mantou (dinner only), White Pepper Crab (dinner only) and Singapore Laksa. More tempting dishes await hot off the grill, such as Lamb Chops, Australian Beef Ribs and Satay, in addition to a Sashimi Bar with fresh Salmon, Tuna (Maguro) and Octopus (Tako). Sweeten the celebration with an array of local and novel desserts including Durian Pengat with Sticky Rice, Cempedak Crumble Cake, Ying Yang Muah Chee and Teppanyaki Ice Cream of the Day. 

Lunch guests can enjoy a Singapore Laksa cooking demonstration at 3 pm.

One Night Only National Day Collaboration by Marvas Ng & Damian D’Silva at Rempapa

For the first time, Chef Marvas Ng works together with Chef Damian D’Silva in a culinary journey that revisits his Singaporean-Chinese roots and weaves a new story of heritage and creativity. This collaborative effort by the two Singaporean chefs is a sumptuous feast inspired by Singaporean-Chinese culinary culture comprising 2 snacks, 6 different sharing dishes and 2 desserts. 

Enjoy dishes such as the 16-day Dry-aged Duck Crown with perfectly crispy skin, served with caramel chicken jus, sauteed kailan and mandarin orange segments; and an incredibly luxe Iberico Pork Jowl, marinated char-siew style and perfectly grilled over charcoal before being served with a refreshing cucumber and wing bean salad tossed in a housemade Teochew chilli sauce that takes one full month to ferment.

BBQ Menu, Activities and Live DJ Entertainment at CÉ LA VI

Celebrate National Day at CÉ LA VI on National Day from 5 to 9 pm. Enjoy a special BBQ menu at the Club Lounge, including BBQ oysters with smoked ponzu granita and maimoa lamb chops with chimichurri.

The menu includes sharing style platter options with either a Classic BBQ Platter($155++) or a Surf & Turf BBQ Platter ($180++). From 6 to 9 August 2022, The Lobby Lounge presents the National Day Afternoon Tea – a symphony of locally inspired delicacies specially curated by Executive Pastry Chef Desmond Lee in celebration of the nation’s melting pot of culture. 

The four-day affair will highlight local flavours including the Bandung Raspberry Lychee, a tangy creation with Raspberry and Lychee Marmalade topped with a Rose Bavarois Cream; an elevated Peanut Toast – a classic Banana Cake taken up a notch with fragrant Caramelised Peanut with Praline; the Laksa Prawn Quiche and Kani Crab Cake that packs a punch of Umami with Miso Aioli and Scallions “Kani”. 

The National Day Afternoon Tea includes a theatrical experience at the Live Chendol Station, where unlimited servings of Chendol Ice Cream made with Coconut Espuma Nitrogen Ice Cream topped with Coconut Jelly, Gula Melaka Granite, Red Beans and Sweet Corn will be served in a whole Coconut husk.
