There are over 1,200 varieties of cheeses in France including Brie, Comté, Bleu d’Auvergne, Cantal, and Reblochon. Other European cities including Italy, Spain, Greece and the Netherlands produce specific varieties of cheese. All cheeses in Europe can be traced through every single stage of product development from its date of origin.
The main families of European cheeses run the gamut of fresh cheeses; soft cheeses with either a bloomy or washed rind; blue cheeses; pressed cooked and uncooked cheeses; goat cheeses; and—a perennial favourite—the melted variety.
Each cheese is inherently rich and unique in its own right, running the gamut of its many aromas, texture, aspect, taste, tenacity, and history.
