What | Celebrity Chef Philip Chia debuts the first Chinese New Year for The Real Peranakan this year. There are two Chinese New Year festive sets. Prosperity Set A is for a minimum of two to dine and features the Prosperity Pen Cai, signature dishes of Ayam Buah Keluak, Babi Pongtay, Nyonya Chap Chye, Ikan Chuan Chuan, fluffy Thai Jasmine Rice and the Chendol topped with Japanese Azuki Beans. The Prosperity Set B serves a minimum of five includes everything in Set A with the addition of Ngoh Hiang. I liked Chef Philip Chia’s rendition of the Pen Cai because hos fragrant seafood broth has been simmered for hours to extract the essence of abalone, Hokkaido scallops, prawns and crab. This is commonly known by the Peranakans as Bakwan Kepiting. The claypot features New Zealand abalones, sea cucumbers, Hokkaido scallops, fresh tiger prawns, fish maw, flower mushrooms and big plump crab meat balls hand moulded using fresh crab meat and minced pork as well as roasted pork that is marinated with Chef’s specialty, homemade blend of five-spice powder, then roasted for its crunchy skin. What | Peach Blossoms at the transformed PARKROYAL COLLECTION Marina Bay opened its doors this year to herald the year of the Ox. Set Menus as well as ala carte menus are available. Chef Edward Chong works his familial magic to whip out creative yet tasty dishes that he is known for. Enjoy the Harvest Set with family and friends. This menu comes with the Prosperity Yellowtail Yu Sheng with Sea Whelk, Fish Roe and Organic Mixed Fruits. The fresh seafood is served separately in a porcelain container that resembles an opened tin can of food which you can add to the yu sheng that you toss. The Premium Delicacies Sea Treasures Supreme Soup is boiled with Peking Duck to give it an additional oomph to the flavour. The Braised South Africa Abalone is served with Glutinous Rice stuffed with Smoked Chicken Wing. The abalone is served in a pot of hot water. Guests are provided with a timer that has been calibrated with the same timing to heat up the abalone. Other dishes in the set include the Steamed Black Golden Patin in Konbu Tsuyu accompanied with Steamed Carp Shaped Dumpling; Rice noodles with Juicy Giant Beef Ball and Diced Celery in Imperial Beef Stock as well as the individual dessert platter. The dessert platter is also a visual delight of bird’s nest with papaya and egg, cream of walnut, three-layer reunion nian gao with minced peanut and coconut butter cookie. |

What | Masterchef Ng Wai Tong and his team has prepared a selection of traditional dishes to herald the year of the Ox. There is the Alaskan Crab Lo Hei or Hamachi Yu Sheng in “Soon Tak” style. This year, there is a new Truffle Abalone Lo Hei, an elevated take on Wah Lok’s classic Abalone Yu Sheng. Black Truffle and Truffle Oil dressing is added to the yu sheng. What | Dine in or takeaway Chinese New Year sets to enjoy. Familiar mainstays include YUN NANS Prosperity Treasure Hot Pot that comes with more premium ingredients this year. Instead of the usual thick broth from other pen cais, this one features a golden broth that is almost like a soup. The broth is brewed for six hours with jinhua ham, old hens, chicken feet, pork bones, lean pork, pork trotters, dried scallops and carrots. Ingredients such as wild morel, wild golden fungus, sea cucumber, abalone, scallops, prawns, mushrooms, fish maw and cordycep flowers are added to a base of yam and Chinese cabbage. Other not to be missed dishes include the “Bi Feng Tang” Style Pork Ribs with Truffles that are extremely tender on the inside and crispy on the outside and drowned under golden brown deep fried Yunnan garlic. Black truffle from Yunnan are added to give this dish more flavour. Don’t forget about the braised truffle ee-fu noodles, traditional salt baked chicken, steamed glutinous rice wrapped with lotus leaf or double boiled peach gum and snow fungus.
