Diamond Kitchen – all that hype. So what’s the big deal about this neighbourhood restaurant that offers Chinese comfort food? I read many raving reviews including one by Wong Ah Yoke. I was determined to try it out and the opportunity arrived sooner than I expected. The experience was excellent and the food was so delicious, we didn’t want to leave.
Young entrepreneurs and cousins Josh Chou and Lambert Chen, age 30 and 27 respectively opened their first F&B venture together with Chef de Cuisine Kevin Lau helming the kitchen with over 25 years of experience.
One of Diamond Kitchen’s signature dish, Sauna Prawns, is available at S$24, S$36 or S$48. Its aromatic fragrance from the hot stones and bamboo basket as well as the herbal prawns can be easily identified when it is being dished out of the kitchen. The prawns are steamed in the sauna bath. Ask for sambal chilli and savour the fresh and succulent prawns. Piping hot and sweet to taste.
The Gan Xiang Fried Rice is prepared with homemade sauce and egg topped with deep-feied chicken pieces. Available in three sizes at S$8, S$12 and S$16. Chef Kevin’s Gan Xiang sauce contains dried chilli, lemongrass, ginger, garlic and dried shrimps. That explains the explosion of flavours when you take in a spoonful of fried rice.
Chef Kevin’s Sri Lankan Crab in Gan Xiang is another Diamond Kitchen signature dish that offers a spicy, sweet flavour from the sauxe and crab meat.
Finish off the meal with the Yam Paste with diced pumpkin and ginko nuts.
