Mount Faber Leisure Group has collaborated with award-winning, renowned Danish Chef Henrik Jyrk from Copenhagen to bring his signature Nordic-Asian cuisine for his first overseas showcase. Chef Jyrk will curate festive menus featuring his signature Nordic-Asian cuisine and will be available for a limited time at Dusk Restaurant & Bar and Cable Car Sky Dining.
Chef Henrik is a two-time guest judge on MasterChef Denmark. In Copenhagen, he is known to marry Asian flavours and ingredients into Nordic cuisine and has worked in world-renowned restaurants including The Paul as well as three-Michelin-starred Atelier Crenn. He has also won cooking competitions such as Til Middag Hos (TV Show Chef Edition) 2019, and the largest national cooking competition in Denmark “Sol Over Gudhjem” two years in a row in 2016 and 2017. He married his Malaysian wife and fell in love with her and Asian cuisine.

Experience Nordic Dining in the Skies This Christmas with Award Winning Danish Chef Henrik Jyrk Celebration Menu. The Cable Car Sky Dining presents Nordic Dining in the Skies four-course dinner menu is available from 12 December 2022 until 31 March 2023. It is priced at S$144++ per person with a minimum two to dine.
There is a Celebration Cabin menu available on 31 December 2022 that serves the same four-course dinner menu as well as party kits, champagne and amuse bouche of Nordisk-Asiatiske Snacks (trio of Æbleskive, Croustade, and Fresh Oyster).
Cable Car Sky Dining presents Nordic Dining in the Skies – Starters
Enjoy starters at Arbora and enjoy the views of cable cars travelling to Sentosa Island and back. The bite-sized Danske features Rejer Danish Shrimps served atop warm, soft Danish brioche bread. The second appetiser is the Koldr get laks. Layers of artisanal smoked salmon slices, served atop horseradish and butter toasted rye-bread, and velvety twigs of dill leaves.
Mains to be Enjoyed in the Cable Car
After finishing appetisers, you will be escorted to your cable car where your mains will be set up in the cabin. For mains, there is a choice of Pandestefte Kanmuslinger, a serving of Pan-fried scallops with brown butter vinaigrette, roasted hazelnuts clam fumé and aromatic herbs. The other main choice is Andeconfitering – sous vide duck leg confit with port reduction, red cabbage and caramelised potatoes. Mains are served with a tea bun and salted Danish butter.
You have one round trip from Mount Faber to Sentosa Island to complete your main course. When the cable car returns to Mount Faber, the crew will replace your mains with dessert. A delicious Ris Alamande completes the meal. Saccharine rice pudding with crunchy almonds juxtaposed with sweet and tart Danish cherries. Got to say dessert was pretty good. And the cable car brings you on another round-trip journey for you to enjoy the views and dessert.

The new spin on an iconic cocktail can be dangerously delicious, but extremely potent as well. Created by Danish Winery Frederiksdal exclusively for Mount Faber Leisure Group, this cocktail was launched at ProWine Singapore on 5 September 2022. This S$18++ cocktail is a permanent addition. The Mount Faber Singapore Sling is made with Frederiksdal Likør where Danish Stevns Cherries which are dubbed the “grape of the north” are matured in cognac casks for at least six months.
