This celebration of North Indian cuisine showcases an array of tandoor-cooked dishes by Chef de Cuisine Kuldeep Negi, featuring expertly prepared meats, seafood, and vegetables. The dining experience is elevated with a curated selection of alcoholic beverage pairings.
The meal opens with Bhatti Ki Macchi, a refined twist on the traditional dish typically made with chicken. Here, premium black cod takes the spotlight, complemented by papaya murabba, a sweet and tangy chutney crafted from raw papaya. The signature smoky aroma and bold flavours from the tandoor enhance the dish, perfectly paired with a La Margarita cocktail, made with Volcan Tahona Blanco and fresh lime juice.
The main course begins with Tandoori Bater, a beautifully grilled quail infused with the fragrant essence of rose and aromatic spices, paired exquisitely with jackfruit naan, offering a delicate balance of subtle sweetness and mild heat. Next, the Tandoori Malai Crab takes the stage, presenting fresh crab marinated in a luxurious blend of cheddar cheese and yogurt, accompanied by slow-cooked and grilled pumpkin. A glass of bubbly completes the experience, its effervescence cutting through the richness of the dishes and enhancing their complex flavours and textures.
The Highway Murgh Tikka is a classic showcase of succulent chicken leg kebab simmered in aromatic spices, served with a refreshing side of baby turnip salad, mint and yogurt. Conclude on a high note with Château Marsyas, a full-bodied wine from Lebanon’s Békaa Valley.
A vegetarian menu is available, offering equally vibrant and creative flavours as the non-vegetarian options, crafted with plant-based ingredients. Begin with Bhatti Ki Galouti, delicately spiced vegetable patties paired with papaya murabba, followed by Makai Aur Mattar Seekh, a kebab of sweet corn and green peas seasoned with rose and spices, served alongside spiced jackfruit naan.
Main courses feature Tandoori Malai Broccoli, showcasing charred, tender florets, and Highway Paneer Tikka, traditional Indian cottage cheese kebabs with a smoky finish. These dishes are perfectly complemented by a glass of Markus Molitor Zeltinger Himmelreich Kabinett Riesling, adding a touch of sweetness and refreshing acidity to the palate.
For a memorable finale, enjoy Malabar Lamb Boti, tender lamb infused with Malabar spices, or Malabar Gobhi, expertly grilled cauliflower, both served atop flaky Malabar Parantha—a delightful conclusion for vegetarians and meat lovers alike.
