Executive Chef Lamley Chua of 1-Arden is this year’s Ambassador Chef for Plating WA: Singapore Edition 2023. He has created for Kaarla a main dish of charcoal-grilled Pardoo Okan Wagyu tenderloin and butternut pumpkin done in three ways and served with earthy, silken creamy cauliflower puree, red wine beef jus and topped with freshly shaved truffle.

As Chef Ambassador, Chef Lamley travelled to Perth from 12 to 16 June to learn about Western Australian produce, visit local producers, and present his Plating Up WA: Singapore Edition dishes at a one-night-only Four-Hands Dinner with Chef Lucas Fernandes, executive chef for Fraser’s Kings Park in Perth and the partnering chef for the Plating Up WA campaign. Chef Lucas in turn will visit Singapore from 16 to 20 July to showcase his creations alongside Chef Lamley at the Four-Hands dinner at Kaarla.

“We are pleased to bring back Plating Up WA: Singapore Edition this year and introduce our Chef Ambassador programme. This festival provides a great opportunity for Singapore’s businesses and diners to connect with Western Australia through premium food and drinks as we celebrate the quality, variety and versatility of WA produce prepared and presented by some of Singapore’s well-known dining and drinking venues.”
