2015 sees the biggest Singapore Food Festival, spoiling us for choice with 13 gastronomic events. We have lined them up chronologically for our readers just so you can get truly get “A Fresh Taste of Tradition”. Those still having trouble deciding which and where to go, here’s a sneak peek of what Chefs Violet Oon, Justin Quek and Devagi Sanmugan will be serving us during their upcoming Living Culinary Treasures, STREAT and Suvai 2015.
Living Culinary Treasure with Singapore Food Ambassador Violet Oon
881 Bukit Timah Road, 21 – 1 August (various fixed dates) from 9.30am (breakfast will be served) to 1pm.
It is more than just learning to cook at Violet Oon’s Living Culinary Treasure classes. Much of Singapore’s culture is wrapped up in our food, from traditional cooking techniques and family recipes handed down through the generations.
One of the eight classes will have Chef Tania Aris, food ambassador for the Singapore Halal Federation, and her mother, showcasing forgotten Malay Cuisine cooking and weaving of three types of ketupat rice cakes. She will also be showing the class how to prepare dishes rarely seen in restaurants, including Opor Nangka Ikan Asin (young Jackfruit with salted fish, spices and coconut milk) and three types of serunding (meat floss side dish).
Other interesting sessions include having everyone throwing towels in the air practicing to make roti prata or the technique to making the perfectly bite sized abacus seeds. These eight classes will all be part of Violet Onn’s heart-warming efforts to allow young and old to reconnect with the true culinary DNA of our country.

STREAT with Chef Justin Quek
Clifford Square, 24 – 25 July 2015 from 0600PM to 1000PM.
Get a taste of Chef Justin Quek’s modern interpretation of Franco Asian cuisine during STREAT. He will be serving up his Rojak-inspired salad with Soft Shell Crab Tempura and a homely Lamb Stew, alongside innovative dishes alongside 16 other stalls. One of which will be Chef Bjorn Shen of Artichoke café & bar, famed for his experimental cuisine including the Chicken Skin Ice Cream mentioned in our Savour 2015 Top Dishes Round Up! It would be chance to see local and international chefs give a modern fusion spin to our traditional palette.

Suvai 2015 with Chef Devagi Sanmugam
Tan Quee Lan Street (Opposite Bugis Junction), 30 July – 2 August from 1200PM to 1000PM.
Singapore’s first Indian Gourmet Festival is about to turn up the heat with four days of exciting activities. Not only will there be Celebrity Chef Masterclasses featuring nine top chefs from Singapore’s Indian and non-Indian community, a Family Cooking Challenge, but also an double attempt at the Guinness World Records for Largest Curry and Largest Cooking Vessel on 1 August 2015.
Admission is free, with pop-up stores from the nine chefs serving up 25 Indian dishes like you have never seen before (S$5 to S$15). Chef Devagi Sanmugan will be giving our Kueh Pie Tie a flavourful burst of Indian spices with Explosion and an update on the traditional Gulab Jabun as a more aromatic and powerful pairing of Saffron puffs and Gula Melaka Cardamon sauce. Chef Damodaran of India returns with three traditional dishes like Lamb Moonthiri Varuvall, while Chef Jonathan Lee is back with an inspired Spiced Chocolate Cake with Cinnamon Ice Cream.
All can be enjoyed throughout the event from 1200PM to 1000PM daily with the Havana Social Club Trop and MAPS entertaining guests from 0830PM onwards.
