Grand Hyatt Singapore - Best Bread

Grand Hyatt Singapore will be offering famous French dark soughdough breads from Paris-based bakery Poilâne from 1 to 4 April 2014 as part of the World Gourmet Summit which focuses on reviving the classics and celebrates Singapore’s service excellence.

Poilâne serves famous clients including Salvador Dali and Man Ray. There are three outlets in Paris as well as two others in London. Head Chef Mathilde Fruit from Cuisine de Bar, London accompanies Apollonia Poilâne, the third generation baker of Poilâne for the World Gourmet Summit.

These breads will be retailing at the pop-up shop in the lobby of the Grand Hyatt Singapore. as well as The Shop at mezza9. Weighing 1.9kg, each of these dark whole loaf sough dough breads come stamped with the signature “P” and require six hours to prepare. They are then traditionally baked in wood-fired brick ovens, using stone-ground gray flour and sea salt from Guérande. These bread will be air-flown from the bakery in Paris every two days.

These breads are priced at S$28+ for a whole loaf  that weighs approximately 1.9kg. Half loaves and Quarter loaves will also be available at S$18+ and S$8+ each, respectively.

10 SCOTTS will offer a selection of 14 savoury tartines from Poilâne with a daily rotation of six varieties from 1 to 4 April. These open-faced sandwiches include guacamole and crayfish; Saint Marcellin cheese with cured ham, marjoram and infused oil; and smoked salmon, fresh cheese and chives and are prepared a la minute by Poilâne Mathilde Fruit as part of the Afternoon Tea menu for S$43++ for the weekday and S$53++ for the weekend.
