Mikuni celebrates Hina Matsuri, the Doll Festival every year with a special seasonal bento set menu. Japanese families celebrate the doll festival by wishing their daughters good health and happiness in life. Check out last year’s bento set here. And this is one bento set by Chef Keisuke Uno that I look forward to every year.
Priced at S$138++ per adult, the Hina Matsuri menu is available throughout the month of March 2021 for lunch. The menu begins with the Hinatmatsuri Assorted Kuchidori. It comes with a variety of snacks. The Uni Cake, Goma Tofu, Prawn Chimaki-Fu – a Japanese Dumpling, Takenoko bamboo shoot and Dango.
A selection of Tempura treats are to be paired with the Snow Salt. Chef Keisuke replaced the traditional tempura dipping sauce with Snow Salt for a more natural taste. The rare ingredient is hard-to-find in Singapore. Snow salt is created by compressing sea salt and rice flour using an iron press. It has a melt-in-your-mouth texture with a very light, not overly salty taste. Add a little salt to the Scallop, Kinmedai Fish, Baby Sweet Potato and Shishitou tempura.
What’s a bento without Sashimi or Sushi. The sashimi selection features Otoro from Yamayuki, Japan’s top tuna merchant; Sawara (Spanish Mackerel) and Scallop. The bento set includes Mikuni’s signature California Roll featuring King Crab and Soft Shell Crab.
I enjoyed the Lobster Uni Yaki, which is Mikuni’s signature grilled dish. Onions are caramelised with cream and sea urchin to create a beautiful rich sauce. This sauce is sieved then drizzled over grilled lobster that has been sous vide.
Miso Braised A5 Migyazaki Wagyu Beef is the star dish of this bento set. Prepared over three days, the beef is first marinated in red wine sauce and a secret spice. After that, it is braised over low fire on the second and third day to reduce the sauce without boiling. Finally, Red Sake is added before it is served with a side of Japanese spring vegetables. This could be one of the most tender beef I have eaten.
Complete the meal with a light dessert made of Opera Cake infused with Green Tea. There is also a Kuzumochi ice prepared from fermented wheat starch and a green tea flavoured macaroon.
