29 June 2012, Singapore – As part of Resorts World Sentosa’s (RWS) ongoing Global Gourmet Kitchen initiative that brings the world’s best master chefs to Singapore, Palio Italian Restaurant in Hotel Michael welcomes a two-time world champion in Acrobatic Pizza – Chef Pasqualino Barbasso from Sicily, Italy.
From 29 June to 8 July 2012, be treated to a visual spectacle when Chef Barbasso twirls, spins, juggles and tosses his pizza dough in a playful acrobatic performance that you probably never seen done with food before.
This is a rare opportunity for kids to witness an adult play with his food. The climax of the act is seeing him twirl a 1.9-metre pizza dough in the air.
Having made countless appearances and performances around the world in trade-shows, exhibitions and pizzerias, 36 year-old Chef Barbasso has honed his skills over the past decade, to be able to showcase jaw-dropping stunts that usually leave spectators awed.
However, Chef Barbasso’s passion and expertise in pizza making is still the primary focus and one of the key ingredients that make a good pizza is of course, its dough. And how it is prepared is what he calls “the magic that happens before the dough goes into the oven”.
Chef Barbasso will be featuring some of his signature pizzas at Palio. A must-try is the Arrotolata (S$34, 12-inch), which is a rolled-up pizza, with artichoke, artichoke cream, mozzarella, Parma ham, rucola salad and shaved Parmesan cheese. This creation represents his cooking style and he describes it as “an authentic Italian pizza baked to Sicilian traditions”.
Another pizza that I recommend is the Bolero (S$34, 12-inch). Focaccia bread is used, with burrata cheese, rucola salad, cheery tomatoes, air-dried beef “Bresaola” and aged balsamic vinegar reduction.
